It is said that this is the perfect temperature for serving espresso. It was a study done by the JOURNAL OF THE SCIENCE OF FOOD AND AGRICULTURE that uncovered this. Or as the makers of espresso machines describe:
“At exactly 92 degrees C and precisely 15 bar pressure, the perfect espresso is born. The temperature that neither underexploits nor spoils the coffee and the pressure required to extract all the rich flavours.” - Krups
